Peach, Prosciutto, & Brie Flatbread Pizza

Ingredients:
2 pieces naan bread
1 TBSP extra-virgin olive oil
1/4 tsp. each kosher salt and black pepper
1 (4oz.) package brie, rind removed and thinly sliced
1 medium peach, thinly sliced
8 pieces thinly sliced prosciutto , torn into pieces
1 TBSP balsamic vinegar or balsamic glaze
2 TBSP fresh basil
Directions:
Preheat oven to 400 degrees F. Line two baking sheets with parchment paper. Place one piece of naan on top of each baking sheet.
Brush both pieces of naan with approximately 1/2 Tbsp. olive oil. Season naan with salt and black pepper.
Place pieces of brie evenly over naan. Top brie with prosciutto and several slices of peaches.
Bake flatbread in preheated 400 degree F oven for 10-12 minutes, or until cheese is melted and naan is golden brown and crispy.
Serve immediately topped with a drizzle of balsamic and fresh basil.

Replace the balsamic vinegar [in the original above recipe] for local honey. We love to mix it up with a good local bourbon honey.
Consider adding two types of cheese; brie and blue cheese.
The main ingredients of naan bread, olive oil, and salt/pepper can be a great springboard to other flavor combinations. Example: Tomato slices, mozzarella, and a meat like salami or prosciutto can be baked in the oven. When finished top with fresh basil, balsamic glaze, a small amount of salt/pepper, and a fresh ball of burrata cheese split down the middle to allow the curds and cream to spread. Don’t forget a little olive oil drizzle. Another combo is fresh blueberries and goat cheese. Bake before adding arugula and honey. I like to add a few red pepper flakes just to give a small kick to the sweetness.
Favorite wine: White - preferably a chilled Riesling or Pinot Grigio
