Pumpkin a la Vodka
Ingredients:
1/4 C. Vodka
1 tsp. Nutmeg
1 pkg. Pasta
1 C. Pumpkin Purée
2 Tbsp. Olive Oil
1 Garlic Clove, minced
1/2 tsp. Chili Flakes
1 Cup Heavy Cream
1 Cup Parmesan Cheese, grated
2 Tbsp. Tomato Paste
1 White Onion, diced
Pancetta, diced
Salt and Pepper
Directions:
Add olive oil to a skillet on medium high heat.
Add your diced onion & pancetta. Cook until onion is translucent.
In a separate pot boil your noodles in water that has been salted.
Add red pepper flakes and garlic to the diced onion and stir.
Add the tomato paste & vodka to the skillet. Mix well and let cook 1-2 minutes on medium heat.
Add pumpkin to the sauce and stir.
Add cream and a pinch of salt, pepper, and nutmeg. Stir to incorporate.
Add your Al dente noodles to the sauce and stir gently.
If the sauce is too thick add pasta water to get to desired consistency.
Remove skillet from heat, plate. Top noodles with fresh Parmesan. Add salt and pepper if needed. Enjoy!
